RECIPE IDEAS
Tonight for dinner I decided to make one of our favorite mexican dishes, Enchilada Casser-Ole! I am always searching for easy, healthy, dinner ideas and so I thought I would share one with you. It is super easy to make and tastes amazing! It even has the calories all added up for you. Since Brian and I don't eat a whole casserole worth of food for dinner I divide everything into two containers and then I freeze half of it. The next time I am needing a quick meal, I can just grab it out of the freezer and throw it in the oven.

This time I decided not to add the sour cream. After it was done cooking we added a lot of lettuce and a little bit of sour cream to our serving. I added it all up on MyFitnessPal and it came up at 268 calories per serving (a little bit less than what it says on Taste of Home) without the sour cream or other toppings. I also used wheat tortilla's.
These are my favorite wheat tortilla's. You can buy them at Macey's and they are really cheap. It is all we buy now. They taste great!
